1. Roasted potatoes and veggies

Potatoes are quite inexpensive, as well as whatever veggies you want to throw in there such as carrots, onions, zucchinis, celery, radishes, etc. The only time-consuming part is slicing them all, and even then, it’s not so bad. Toss them all in a large baking tray with some olive oil and whatever spices you prefer, and there you have it! An easy, healthy meal is born.

2. Quiche

Many people think of a long grueling process when it comes to making quiche. It’s actually not long or difficult at all! All you need is a frozen pie crust, eggs, cheese, and whatever else you want to add inside such as spinach and ham, and voila! You have a tasty meal, loaded with nutrients and loved by all!

3. Greek Salad

If you’re looking for a quick, light and healthy salad to make, a Greek salad is something to consider. All that’s needed to do is cut up some tomatoes and cucumbers, sliced red onion, crumbled feta cheese on top, and oregano and salt for flavor. Mix it all in a large bowl with some extra virgin olive oil, and you get a healthy and very tasty light meal. You can also have some whole wheat bread to go with it, to soak up the yummy juices as an added bonus!

4. Omelet

Eggs are packed with nutrients and are considered to be a superfood. Making an omelet is fast, easy and nutritious for anybody in the family. It takes minutes to make, and you can add anything you want in it, from green peppers to bacon to spinach. If you’re feeling extra adventurous, adding some cheese at the end could make it that much tastier!
